The role of ethyl vanillin

Ethylvanillin is the organic compound with the formula (C2H5O)(HO)C6H3CHO. This colourless solid consists of a benzene ring with hydroxyl, ethoxy, and formyl groups on the 4, 3, and 1 positions, respectively.
Ethyl vanillin broad-spectrum type of spices, and is the world's most important synthetic spices, was one of food additives industry indispensable important raw materials, its aroma is vanillin 3-4 times, have full-bodied fragrance vanilla bean, and stay joss-stick lasting.
Ethyl Vanillin is widely used in food, chocolate, ice cream, beverage, and cosmetics to play the role of aroma and fixative. Ethyl vanillin can also do other feed additives, electroplating industry, brightening agent, intermediate for the pharmaceutical industry.

It is used as a substitute for vanilla in foods and perfumes, because it is less expensive and stays better in storage and transport.

Ethyl vanillin is actually much more expensive. However it's also much stronger than vanilla. So the cost of using is lower.
